Panko Crusted Shrimp

As promised in my last post, here is the recipe for the shrimp I served with the butternut squash, lemon and basil risotto.

Shrimp is not something I cook on a regular basis. I like shrimp, but never go out of my way to eat it. However, when I ate those shrimp for the first time (at a team-building tapas cooking class), I told myself I would definitely cook a similar recipe in the future.

For two people

  • 12 shrimp, uncooked & peeled 
  • 1 lemon, juiced
  • 1 tsp of grated ginger
  • splash of olive oil
  • 1 egg, beaten
  • 1/2 cup of panko
  • 1/2 cup flour
  1. Preheat the oven to 400.
  2. Marinate the shrimp in the lemon juice, ginger and olive oil, for 20 minutes.
  3. Coat the shrimp buy covering it in flour, then dipping in the egg and then covering it in panko.
  4. Place the shrimp on a baking sheet (or any other dish that goes in the oven) and cook for 7 minutes.
